The preparation:

  1. Melt the butter over low heat
  2. Add the flour, eggs, sugar, a small pinch of salt and start stirring from the center.
  3. Add the milk little by little as the mixture thickens
  4. Add the butter, and continue to mix in the center
  5. Add the end of your milk and mix your preparation
  6. If there are lumps, use a small electric mixer to make them disappear
  7. Add your alcohol or orange blossom
  8. Let the dough rest for at least 45 minutes
  9. Make your pancakes
